Americans eating more—and more often

Everyone knows Americans are getting fatter. But its been unclear whether thats because were eating more calorie-dense foods, bigger portions, or more frequent meals. A study out this week in the journal PLoS Medicine pins the blame mainly on portion size and eating frequency.

Researchers at the University of North Carolina at Chapel Hill, who analyzed surveys that were taken between 1977 and 2006, found that total calorie intake increased by 570 calories between 1977 and 2006229 of those calories were added in the last decade. In the late 1970s through the early 1990s, portion size accounted for the bulk of the increase, addingl 15 calories a day, on average. Diagnosis of alcoholism

There are several ways to detect and diagnose alcoholism or alcohol abuse. In general it is easier to detect alcoholism in men than in women. Stigmatization fear may be one reason for women to deny that they drink and suffer from alcohol related medical condition (and women usually drink alone), which is less of a problem in men who tend to drink in group and more easily accept that they drink and may have an alcohol related medical condition. As a result, it may be more difficult to detect alcoholism and alcohol related medical condition among women.

For a number of years, the Comcast Firecracker 5K has been held in honor of Libby Stooksberry, a mother, fitness instructor and friend to many, who died of brain cancer four months after she was diagnosed in 1999.

This year, first-time runners in the 5K — a fundraiser for St. Jude Children’s Research Hospital — will include soldiers in Kabul, Afghanistan, who will hold a “shadow race” at the International Security Assistance Forces Headquarters there.

Italians have much to teach us about healthful eating

Travel is an opportunity to explore new sights, sounds and flavors, and a week in Italy provided me with all that and more. Here are a few tasty insights from my time under the Tuscan sun.

Farro is a popular Italian grain that is perfect for anyone looking for a brown rice alternative. It is related to wheat, but its gluten molecules are weaker, making it more easily digested. Some people with gluten intolerance (not celiac disease) are able to handle it.

Farro is used whole in soups and salads and ground into flour for breads and pasta. A half cup, cooked, has 100 calories and 4 grams each protein and fiber. It contains cyanogenic glucosides, which stimulate the immune system, lower cholesterol and assist with blood glucose maintenance.
